Breakfast taco

1 Pound Hot Sausage (Like Owen's or Jimmy Dean pork sausage)
8 Eggs
2 Cups Shredded Cheddar Cheese
1 Dozen Soft Flour Tortillas
Salsa

Brown sausage in 9 inch iron skillet and drain.
Add the cheese and eggs cooking 'til firm and the
cheese is melted. Add about one tablespoon of the
sausage mixture and salsa to taste to a tortilla .
Fold the tortilla around the filling.
Olé!

These made a great meal on camping trips with my sons
since it's all prepared in one skillet.
Hint: Crack and put eggs in an airtight plastic
container for easy travel in the cooler.
