12 slices bacon, crisp and crumbled
1 cup shredded cheddar cheese
1/3 cup chopped onion
2 cups milk
1 cup bisquick mix
4 eggs
salt and pepper to taste
Preheat oven to 400 degrees. Grease a 10 inch pie plate. Sprinkle bacon and cheese into the bottom of the plate. Beat remaining ingredients in a bowl until smooth (about a minute with a hand mixer). Pour mix into plate over bacon and cheese. Bake 35-40 minutes, until a knife comes out clean. Let cool 5 minutes before serving.
Variation: use part sausage, part bacon.
