The legendary Australian
cheesemakers David and Anne Brown produce this marvellous semi-soft cow's milk
washed rind cheese on their farm in
Milawa, several hours drive from
Melbourne.
It's pink-orange natural rind is dusted with grey mold. It's considered to be a table cheese, and has a typically table cheese sharp taste, but is also an excellent ingredient to cook with.
