The
Sake Meter Value (
Nihonshudo) is a way of rating how
sweet or
dry sake is. This is only a general estimate, how much unfermented sugar is still left.
Higher is drier, not necessarily better. There is, to the best of my knowledge, no limit on how high or low the number can get.
