Pork Tenderloin with Onion
Serves 2
1/2 pound of
Pork
Tenderloin
1 large Red Onion
1/2 tsp Ground
Thyme
1/2 tsp Salt
Slice
pork tenderloin across the grain into 1/2 inch thick slices.
Hammer the slices flat until they are about 1/4 inch thick.
Slice the onion into very thin slices, and separate the rings.
Mix the Salt and Thyme together and keep available.
In one pan put 1 tsp olive oil and begin sauteing the onion
In another pan spray no-stick cooking spray, and add the pork patties.
Constantly stir/flip the contents of each pan, and sprinkle the Salt/Thyme mixture generously on each.
After about 5 minutes the onion should be soft, and the pork should appear done. Add the Onion to the Pork and stir. You may want to add a few Tbsp of water to the pan to preventt sticking and to further soften the onion. Cook the onion and pork together for about a minute and serve.
