An animal or symbolic being used to represent a team or product. Tux is, for instance, the mascot for Linux. Often the mascot is some dweeb dressed up like the animal (or sometimes concept) being symbolized. In the Linux case, Tux only exists as a drawing (so far) and stuffed toy penguin that looks like he's just had his fill of herrings.
